I thought similarly. Find a salvage I/O runabout (some accident on the  
rocks). Chainsaw out the engine, nearby hull/transom area with I/o unit, graft  
long skinny pod/sled onto it. Glass over the deck and use home depot PVC pipe  
snorkel. Maybe highrise exhaust pipe too (from a wrecked K-whopper..lol)? 
 
Gas tank in pod?  
 
Gee armchair engineering is fun. Now off to a beta dealer for my own  reality

PS-might be a fun boat in its own right...add a helm station and some  
outriggers (detachable?)

Sort of the KISS  principle. Single engine, direct drive, possible surfacing
prop. Leave the  steering to the boat's rudders. Engine pod could be
transported to race  finish on normal boat trailer, and floated to boat from
the beach or via  lift if neccessary. Standard old auto or used truck engine,
maybe  diesel....disposable if necessary
