But then someone has to pilot the rib bouncing around in a headsea. Much
more relaxed after a tiring race to be on Afterburner using her own steering
etc.

But will it tow at 20 knots into light headwinds and 15 into
moderate/strong headwinds?
If so it would be a good option as you could sell it when finished with
for about what you paid for it (second hand) and haven't had to build
anything.
