You seem to have it covered. Especially using a range of values to get a statistical result.

  It should be possible to calculate by putting some scales under one side of the boat and jacking up the other side,  measuring the difference in weight on the scales and doing some basic triginometry

I have had a copy of PNA for about 25 years, and never noticed that 
paragraph before (more accurately, I dont remember noticing it before, which 
is not quite the same). OK, mine is an earlier edition and doesnt have the 
illustration, but the text is much the same. I didnt even think of looking 
there.
The method is pretty simple in principle, but for a 15 tonne boat could be a 
bit awkward, as there is not enough headroom in the workshop and no hoisting 
equipment that can support the boat.
Could be tricky.
